    Yes, my youngest has finally hit age 21 and so now I’ve got a household of people who are formally adults!!! I’m very thankful to God, family and friends, my country and everything in my life. I am truly fortunate because I’ve been given so much. Thanks be to God, the main Giver!!

    It’s been a good birthday eve, had good food, a nice outing to shop, and I’m having a nice cool bubble tea. The weather held up well, with winds blowing away the rain clouds so that we didn’t even need to take our umbrellas out. A very blessed day!!

    @pkml3 You can’t be more minimalist than me! For one thing, I’m gonna buy that chicken pre-cooked LOL. But really, I prefer to make do with what’s in the kitchen and with as few ingredients as possible. I go for the simplest recipes I can find among all the recipes of the same dish.

    I do not roast my own whole chickens (my oven gave up on me!) but here’s a recipe for the kind of chicken that we like to have now and then. https://recipesaresimple.com/recipe/whole-black-pepper-chicken-roast/

  43. πŸ˜‚ Too funny, @Welmaris!! You made me look again and read the WHOLE article. Previously, I only scanned the ingredients because I was going to wing the prep and the cooking.

    Admittedly, I WAS going to substitute chicken breast for chicken thighs because I don’t like chicken bones and skin, just like what she wrote. πŸ˜‚πŸ˜‚

    However, unlike some lurkers/readers on here, I wasn’t going to write a screed on her blog and argue with her about the fat and cholesterol in chicken thighs vs breasts. Those are her arteries, not mine. Her business, not mine. Her recipe, not mine. (Besides, I’ve plenty of bad cholesterol from steak. πŸ₯©)

    I just took the elements that I liked (and I’m thankful that it’s doable) and skipped the rest. Take it or leave it, like I always say. πŸ™‚

    @packmule3,I love Vietnamese food. In the winter there’s nothing like pho to warm you up. My local place gets a lot of Korean golfers who come for food in lettuce wraps. I also like the flavor of lon grass. Anyway, your lunch sounds great-Bon Appetit.

  51. @Growing Beautifully, I got the chicken and the ginger-garlic paste and made the first recipe of Black Pepper Chicken. I chose that one because bunging a whole chicken in the oven is almost stress-free – the grocery prints the exact time and temperature for the weight of each one on the wrapper. I added a little bit of Worcestershire sauce from the 2nd recipe just for interest. I got the ultimate compliment from my younger (fussy) daughter; she asked when I would cook it again.

Late to the party, but thanks, @GB for the roasted pepper chicken recipes! πŸ™‚ I just learned how to cook last year (facepalm) so new recipes and creative ways to set off the smoke alarm (lol) are always welcome. There’s a rotisserie about a 10-minute walk away from my place that serves really good black pepper chicken (<3 ), so yay, I'm excited to try make my own. (operative word: try. LOL.) I already know how to make Korean fried chicken (the easy / cheat version) and oven-baked barbecue chicken, but I tried making pineapple chicken once and it was a complete fail. So my chicken batting average is roughly 67%. πŸ™‚

    On Vietnamese food, apart from pho, I also love Vietnamese summer rolls. Funnily enough, I think I'm one of those who are genetically unable to tolerate cilantro. And vermicelli! I wonder if they're from the same plant family.

  55. @Growing Beautifully, it’s funny but when I buy cut-up chicken at the supermarkets here, they are always without skin. If I want skin to rub spices onto, I have to buy a whole chicken. One think I used to like to make when I lived in the states was a garlic-rosemary chicken. It involved putting slivers of garlic under the skin and sticking rosemary in as well. Many people like this for lamb, too. With a drizzle of olive oil on top, right? 4 ingredients, including the meat.

    Another very simple thing to do with chicken, whole or in bits, is criss-cross it with streaky smoked or unsmoked bacon. It adds a lot of flavour to the sauce as well and the fat can be removed. This is a popular thing to do with chicken or the Christmas turkey in England and simple as can be.

    My family really likes chicken. I’m always looking for reasonable simple recipes, too. I really like Spanish chicken, sort of a baked dish flavoured with diced or sliced chorizo and capsicum peppers. Last night I made Jamaican-style jerk chicken for the first time. Not for those who prefer mild flavours. Now I’m hungry and must stop…πŸ˜‹

    Thank you for so many great ideas on how to roast chicken easily. I’d like to try the garlic and rosemary (over here, rosemary is not commonly used, I feel) recipe and of course the one with bacon. My family likes chicken too, one of the few things that everyone will eat. For anything else, there’s always 1 person who won’t like that meat or vegetable. It’s such a hassle to satisfy everyone! πŸ˜‰

  57. @Growing Beautifully, I can empathise with trying to please everyone. Sometimes I just give up and don’t make things that my husband and I would like. Of course, then comes the day after the children have supper elsewhere and say, ‘We had (chicken Fajitas, paella, Thai curry – whatever) and it was so good!’ πŸ€¦β€β™€οΈπŸ€¦β€β™‚οΈπŸ€·β€β™€οΈ I just don’t say anything but cook it after about a week so we can all enjoy it.
